The famous bleu d’Auvergne PDO is a blue veined cheese with a strong character. Love it Or not, everyone knows it ! Back in 1845, Antoine Roussel the son of a farmer from Auvergne has the idea to incorporate mould he saw growing on his bread, into a cheese. He pierced the cheese with a sewing needle to allow the for a to grow and multiply within the cheese.
His cheese had so much success on local markets, it wasn’t long before other cheesemakers copied him and started crafting many of the blue cheeses we know and love today.

Bleu d’Auvergne PDO is a classic staple on cheeseboards, this cheese owes everything to the unique know how of our master cheesemakers & ripeners from Auvergne who salt each wheels according to PDO rules, and use exclusively high quality PDO milk.
A 28 days ripening period allows each wheel of bleu d’Auvergne to develop harmonious blue veinings & grow into a well-rounded cheese with an incredibly creamy texture.
